“Cheesy” Kale Chips


I thought i would try to add some of my favorite recipes from time to time. My go-to recipe for snaking or trips is “Cheesy” Kale Chips.

Kale is one of my favorite foods, there are many varieties and countless ways to prepare it and it’s always delicious right from the garden.

Ingredients (all organic):
1 1/2 large bunches of  kale                                                      
2 cup cashews (soaked, i only do about 5–10min but can be longer)                
1/4 cup chia seeds (soaked with cashews)                                                                        
3 red bell peppers, seeded and chopped                                              
2 medium sized lemons squeezed                                              
1 Tablespoon honey (optional)                                              
3-4 Tablespoons nutritional yeast                          
1 teaspoon garlic granules                                                                                                             1/2 Tablespoon turmeric powder                                                                              
1/2 teaspoon  sea salt or to taste.

*all measurements are a rough estimate. i don’t really measure, just a little bit of this and a little bit of that. 🙂

How to prepare:
Blend all ingredients (besides kale) till smooth.
Tear Kale off stem and into 2-3″ chunks.
Pour sauce over Kale in a bowl and mix till kale is covered on both sides.
Layer in dehydrator making sure not to overlap so they dehydrate properly.
Dehydrate at 135f-58c for 2-3 hrs
Then lower temperature to 115f-46c for 8 hrs or until moisture is gone, they should not be soggy but crunchy.

  1. You can try, I never have. You could try it on really low and let me know how it turns out 🙂
    The sauce might burn, but….they might turn out yummy as well.

    i like the sound of cheese! but where is the cheese? (yeah i said it in my best “old lady from the Wendy’s ‘where’s the beef’ commercials” voice. i am confused! i did fresh garlic and red pepper flakes to turn up the heat. they go great with a cold adult beverage.

      lol, Where is the cheese?!?
      Amazingly enough the cashews, red peppers and nutritional yeast make them taste quite cheesy.
      And YES, fresh garlic is always best!
      Followed by a cold adult beverage dose wash them down proper 😉

    Love the vegan twist on these and will also be using an oven (don’t own a dehydrator…yet!) I’m going to try 325 degrees and just watch them so they don’t burn 🙂 YUM Thanks for posting this recipe!
